There is a dot-emacs.el supplied with this package. It has these two
lines
(setq pdf-previewer-program "open -a PDFView")
(setq dvi-previewer-program "open -a texniscope")
I'd recommend to create a personal copy of the texdoc script, adjust
there the viewers, and set the *-previewer-programs each to texdoc.
